This will be our first time in the UK and we'll be staying 1 week in London then traveling around for the 2nd week. On 4 Jan 23 we'll be leaving London for York via train but want to stay 1 night with some friends outside of Peterborough. Do we purchase tickets from London to Peterborough and then purchase separate tickets from Peterborough to York for the next day or just tickets from London to York? Thanks in advance!

I find sometimes a split ticking App can show up a cheaper price than even nationalrail does
As you are traveling on different days you will need two separate tickets.
On non Advance return tickets breaks in journey are generally permitted but the outward portion is only valid for one day, unlike the return which is valid for a month.
