We would love to see a play while in London. Is it possible to work that into “Best of London” - 7 days?

So yes, you can work in a show.
We saw Operation Mincemeat and enjoyed that.
Research a pre-theatre dinner at Sarastro.

If still playing at County Hall I’d recommend Witness for the Prosecution. It’s staged in an actual court room.
Operation Mincemeat is fine. Enjoyed seeing it in 2024.
It seems that the itinerary allows free evening time on days 3, 4, and 5. Plus any days you may have before or after the tour.

There are some long running shows but many of the best shows are time limited- if you can share when you plan to visit that will help with recommendations.
Use TKTS, either the app (make sure you have the London app, not the Broadway one) or the kiosk at Leicester Square. This way you can fit a show into whenever you find free time in your travels, and not be fixed to a certain date and time, and you usually get a significant discount. The tradeoff is not all shows are available through TKTS, but many great shows are.
Another vote for Operation Mincemeat.

Theatre in London is amazing. I'll second a vote for Witness for the Prosecution. If you enjoy musicals, my wife and I found The Devil Wears Prada, with music by Elton John and starring Vanessa Williams to be quite enjoyable.
You didn’t mention when you are going but I would encourage you to check the National Theatre on the south bank https://www.nationaltheatre.org.uk/whats-on/. The runs are usually time limited and I don’t think they are on TKTS but the shows are generally good. In April we saw Leslie Manville and Aiden Turner in an interesting production of Les Liasons Dangereuses. Over the years we’ve seen two productions of Pinter’s No Man’s Land, the first with Ralph Richardson and John Gielgud, the second with Patrick Stewart and Ian McKellan. The National is the theatre I always check first.
The Todaytix app covers multiple cities worldwide, including London, and has access to
rush & lottery tickets, which is a great option if you're not that picky about which show
you see. I got a ticket for Six earlier this year for about $35 on the day of the show while
walking around.
