London in Dec, and maybe a castle - need some advice.

I am landing in LHR airport Dec 6 thru 13th with my 2 adult 'kids' & son in law (total of 4 of us) for 8 days We are seeing the new Tina show on Saturday. I'd like some advice on good Winter things to do in London - is Harry Potter worth it? (Yes, my daughter is a big fan).
I'd like to take a train trip out of London for a night or two, to see..... and here I think I've over researched! We are not planning to get a car, so something accessibly by train. Originally thought of York, or S. Wales to see Caerphilly Castle. We'd like to see some of the countryside and hopefully a castle and stay in a nice B&B or over a pub. Suggestions?? Thanks!

Last year I took the train to Bath for the day to visit the Christmas market and walk about town. The 2018 dates have been announced per this article--it runs through Dec. 9. https://www.somersetlive.co.uk/news/dates-bath-christmas-market-2018-1390209

I recommend it if you haven't been and especially if you're able to go on a weekday when it's a little less busy. Nice market and it's just a great town to visit when it's decorated for the holidays.

Is this your first visit? If you have never been there before, I would suggest an overnight trip to York. Ask your hotel to hold your big bags, and just take overnight things.

York ticks lots of boxes, city walls you can actually walk around, cathedral, old streets and it is a contrast to "big city" London. And only 2 hours by High Speed train.
Otherwise I would suggest a day trip to Oxford or Canterbury.

Windsor would be perfect, in my opinion. A short train ride from central London. A great castle to see, and lots of choices of B&B's and small hotels. Lots of great pubs and restaurants. Windsor is small and ideal for walking around and exploring. Walk down to the river to see the swans, then across the bridge to Eton. Easy train ride back to London.
