Could you suggest some reasonably priced hotels in London ? We haven’t been to London in 30 years so we will likely do a lot of the classic touristy sites such as Tower of London, Westminster, Buckingham, London Eye, etc.

Premier Inns are good hotels for those on a budget, yet are consistently clean with very comfortable beds. They are all over London and in some good locations.
Premier Inn County Hall is very close to Westminster. You just turn out of the hotel, walk a block, then cross the Westminster Bridge and you're there. Near there are the Churchill War Rooms, Buckingham Palace, and Big Ben. The London Eye is actually just a few steps away from the hotel on the Thames. So for most of your sights, that would be convenient. I stayed there in 2024 for 5 nights and found it to be a very good hotel that was reasonably priced.
There is another PI just up the street (Premier Inn Waterloo) so you might want to check prices for both. Other Premier Inns in the vicinity include the Premier Inn Victoria (near Victoria Station) and Premier Inn Leicester, near Trafalgar Square. You will also see a number of Premier Inn Hubs, which are cheaper but much smaller (some rooms do not have windows).
All PIs provide breakfast at an additional (reasonable) cost. And keep in mind that PIs offer a variety of pricing options: Non-refundable (the cheapest), a hybrid price that is payable in advance but you can cancel up to 25 days ahead, and completely refundable. I like the Sanctuary House Hotel and will be staying there for a third time later this year. It is really, really close to many of the main sights and near my favorite park, St. James Park. It is about a minute walk to the St. James Park tube station, which will take you to the Tower of London.
You might find my trip report helpful from my first trip, as we saw many of the sights you mentioned.
I’m not sure of your budget or your dates. As mentioned above, the earlier you book, the lower prices tend to be.

Hotel 63 was recommended to my by forum and I stayed there.
Location is the best. Small but decent breakfast buffet. Good Wi Fi.
Historic building.
We like the area around the Angel Tube station. have stayed at the Doubletree by Angel several times. Prices are exorbitant during the summer season but not bad in the shoulder seasons. Although Angel isn't within walking distance of the main attractions, it's an easy Tube ride pretty much anywhere. We like being able to walk over to the supermarket or M&S Foods to pick up drinks or snacks, and there are several non-touristy restaurants nearby which tends to save a bit on dining. (Noticed that there is also a Premier Inn close to Angel.)

Whatever hotel you choose, the cheapest price with the best cancellation policy will always be booking direct on the hotel's website. (NOT Expedia, Booking[dot]com, Kayak, etc; if anything goes wrong with your booking or attempt to cancel, those companies will pass off blame to the hotel, who will blame them, and you will be screwed.)

The Premier Inn at County Hall is a favorite on this Forum. Very well situated. Also for one of the most expensive European cities it’s reasonably priced.
I also think the Premier Inn near the Tower of London would meet your criteria.
