I will be in London for 3 weeks in November. I would like to find a flat or apartment that includes a kitchen area somewhere in the South Bank.

I like Booking.com for research but you can also book through them.
Booking does offer long term flats /apartments.

In London, we prefer serviced apartments (aka Aparthotels) in a hotel-like building with reception desk and other amenities, rather than owner-rentals through VRBO, AirBnB etc.
My first choice in that area would be a studio apartment at Native Bankside:

Another option, closer to the Westminster Abbey area, would be Marlin Waterloo:

Marlin also has a London Bridge location, but it is farther from the river than I like to be.
