We'll be based in Canterbury but exploring around Kent: Sissinghurst, Pilgrim's Way, etc. No luck finding a driver/local guide through the Kent Co. tourist board. Any suggestions?

Not sure they offer the guide service you are seeking, but here is a car service you might check out. If they cannot handle the guide duties, perhaps they can suggest a company that can. We used a car service based in Canterbury to go from LHR to Canterbury. It is named Canterbury Airport Transfers. The web site (if my notes are correct) is taxicanterbury.co.uk/contact. The email is firstclasstravel@live.co.uk. We were very pleased with the car -- clean, roomy, well maintained. The driver drove quite safely, was most helpful loading our luggage, and commenting on various things along the way. We would not hesitate to use them again. Hope this points you toward a solution.
