My husband and I plan to stay 3 nights in York, UK. We are considering spending one full day walking around York. The other day we plan to take an All Creatures Great and Small Day Tour from York to see the Dales. Has anyone else toured like this? If yes, was it enjoyable or overwhelming. Also, please share recommended places to see and activities to do in York. Thank you in advance for your recommendations.

I highly recommend a tour to get out and see the countryside as it is gorgeous!! So, the All Creatures Great and Small Day Tour you mentioned, or another tour of the dales or moors is a great idea.
I would think that the All Creatures Great and Small tour would show you a good portion of the Dales, as much of that show takes place in the countryside.
With regards to York, of course there is York Minster, which is a must see in one of the most beautiful cathedrals. Here is a prior post from last year that has a huge list of things to see and do there.

There is so much to do and see in York, so a lot depends on what you are interested in. You will need to prioritis!
