In London Jan 1-6 - How far in advance should we book certain key sights?

Hi - just wondering how far in advance to book some specific places: Tower of London, Churchill War Museum, and the Wolseley in particular. I'm a little worried about locking us into a schedule now, but don't want to risk not getting spots at key places. We have an itinerary so know the dates and portions of days (am vs pm) we will visit each place. Just wasn't sure how much lead time I should leave for booking. Book everything now or wait?

Also, I wanted to confirm I don't need to book anything in advance for British Museum and Tate Modern?

Is it possible to get tickets for things like hop on / hop off bus, London Eye, Skygarden when we get there? I think I may already have a lot planned for my family of four, so don't want to book anything else unless we end up having free time once we get there. I suppose we will pay higher prices if we book there.

For Hyde Park Winter Wonderland, does that sell out?

(We do already have tix for Harry Potter at Warner Bros and the show Wicked)

The only thing you see on a hop on hop off bus of note is a London traffic jam. The routes are not direct and can take 5 minutes to go 3 blocks because of backtracking. For transport between sites, use the city mapper App and public transport.

I usually go to the Tower of London first thing in the morning and have never needed to buy an advance ticket.
