How do we plan hikes in the Cotswolds?
There are plenty of guidebooks, which should be available via Amazon, which detail walks in and round the Cotswolds. There's a Cicerone one which looks like it would fit the bill - Cicerone publish walking guides to all parts of the U.K. and Europe and, in my experience, are generally very good. If you Google the subject there was also a guide to Pub Walks in Cotswolds which piqued my interest!
You could of course, invest in a couple of Ordnance Survey maps on arrival in the UK and devise your own walks - I am assuming here that you will be able to read a map, otherwise they aren't much more than colourful sheets of paper! When walking in the UK I tend to carry the local OS map along with my guide book as a back up in case we manage to get off route and need to figure out a way to get back. A cheap compass to get you in the general direction if you get off route is also recommended.
And don't forget the waterproofs!

Look on the National Trust UK Web Site. Look at "Cotswolds" and then "Walking" and they come up with a number of Walks that look intriguing.
If you want more than 1 day of hiking, I would recommend HF Holidays. a company I used a few time and love it.
We stayed a week in Burton on the Water in an old manor house and each day we were offered a short ( 6 miles) medium (6 to 8 miles) long (8 - 11 miles). sack lunches provided and nice leisurely pace.
They have dozens of different places to hike/walk all over the UK. (I really have loved the trips I have taken with them.)
We booked a 4 day inn-to-inn hike to/from Bath with Cotswold Walks and it was fantastic. They have many routes in the Cotswolds for self-guided hikes. Walking along the public right of way was amazing, but could be very confusing without the very specific instructions provided. You might look into this type of company (there are many companies that offer this type of service).
The Mark Richards book on the Cotswolds Way is good.
I think theres also a section on the sherpavan forum which covers most of the UK LPDs, long distance paths
