We are three adults arriving in Terminal 2 on a flight landing at 20:20. I have questions about the best way to get to Islington--what is the fastest option? What is the least expensive option? Is the new Elizabeth Line a good choice?

I would take the Piccadilly Line to Kings Cross and then switch to the Victoria line to Highsbury and Islington. It will take about and hour and 10 minutes. And only one change.
Or Piccadilly line to Hammersmith, District line to Victoria, Victoria line to Highsbury and Islington. About 1 hour 10 minutes.
The two routes I mention are the cheapest at 3.50 GBP.
The Elizabeth line is not a good choice at this time.
Or you could inquire about car service that will take you door to door.
