My party of 3 are landing at Heathrow T2 at 8:45 on 7/12 and mean to catch the 12:30 to York at Kings Cross station. Is this enough time to collect baggage, get through customs and take the underground to Kings Cross?

You should be fine if your plane is on time coming in. Figure up to 90 minutes for everything in Heathrow at a worst case, including walking between all locations, and the tube is just about an hour to King's Cross. That adds up to 60-75 minutes of leeway. As I recall our one time coming in T2 rather than 1 or 3 was that it was much faster and less busy than the others.l

It should be but... planes are sometimes delayed.
If you purchase a cheap Advance (with a capital A) train from Kings Cross to York, that ticket is only valid on that specific train and has absolutely no value on later trains if you miss that one. You can't just pay the difference, you'd have to buy an entirely new ticket at walk-up prices.
If on the other hand your train ticket is an Off-Peak ticket, it will still be valid on some later trains.
