Tomorrow we have to transfer in Birmingham and have 25 min. We have luggage and backpacks. We are just concerned about getting to our second train on time and stairs and all the different platforms.
Any suggestions for this?

Hopefully, someone from Birmingham will be along shortly, but if you Google, it says 6 minutes walk or 2 minutes by bus (plus wait etc).

Just walk up the street.
It's about 250 yards so 6 minutes is about right, and is signposted with a steady stream of people doing the same walk.
I'm not even sure whether there is a bus, but if there is its not worth trying to find it to go one or two stops.
I'm never sure (if heading north) if the best transfer is Moor Street to New Street, or train Stratford to Smethwick Galton Bridge High Level, change to the Low Level platform, train to Wolverhampton then main line train from there. At Wolverhampton it is essentially a same platform change normally.
I think it's six of one, half a dozen of the other.
I had that conundrum last week coming from Worcester, and opted for New Street because the elevators at Galton Bridge are out of action. I was feeling bone idle that day.
But a lot of the escalators at New Street are also out of action. That is a pain in the proverbial currently.
Even if you are on an Advance Ticket there is nothing to stop you catching the previous train from Stratford if you want to. The train restriction is only on the main line train.

I feel a little more confident now with this transfer.
when you get off the northbound train at Moor Street, you will almost certainly arrive at the usual platform and doors will open on the left. There is a small chance that the train could be rerouted over the cross over but that is unlikely.
So if it is normal, just get off and follow the crowd to the way out. follow the signs across the road to the side of the shopping mall and then walk along the outside of the mall. When you get to the glass doors of the mall cross the road at the crossing into the station, New Street Station.
You could also walk through the mall and window shop, but probably not in the time you have.
if you have the West Midland Trains and/or Aventi West Coast apps and have data they should give you updated platform numbers and late running, if any.
If I knew which two trains are involved I might have additional advice. I worked for the railway at, and in and out of Birmingham New Street and Moor Street/Snow Hill for many years.
You need to keep a close eye out today for service perturbations. Yesterday was a terrible day due to a broken rail at Winsford north of Crewe. Trains are out of position and crew exhausted. So on going issues are expected today.
In the event of issues you will be allowed to travel 2 hours before and 2 hours after your booked time with all ticket types.
I am aware of a forum member who got to Windermere 2 hours late yesterday due to the problems.
Yesterday cross industry mutual aid kicked in with all tickets valid on any operator on any reasonable diversionary route.

We are supposed to get the 9:43from Stratford Upon Avon, West Midlands.
Then get the 11:12 going to Totnes.
We think we might try to get on the 9:08 to Moor St. Cross Country. We hope that is allowed and think it will be.
I think that's prudent The 1112 is booked to use Platform 11 at New Street, and is a rarity for XC being 9 cars long.
The departure boards will confirm or otherwise the final platform and which coloured zone to use. My instinct would be to use the Red Zone.
The train is due to arrive at 1106 if it remains on time, so has a 6 minute dwell time.
In the Red Zone there are elevators down from concourse to platform, as well as steps and the troublesome escalators.

We made it to the 9:08 and are on it now!
At first the person at the ticket counter said we had to take the 9:43. Then he looked at the time out of Birmingham New St and said it was fine for is to take an earlier train. Whew!
That was a little puzzling.
Your Totnes train is still looking at Platform 11 at New Street, running 2 or 3 minutes late, soon to depart Chesterfield, expected to depart New Street on time.
Update - left Chesterfield 5 late.
