How much time should I allow for getting to Victoria Station?
We arrive at Gatwick from Canada at 11:30am (North Terminal) and I want to take either the Southern train or Gatwick express.
Also can you use contactless creditcards for Gatwick express? I know you can for Southern.
Any other hints for this portion of our travels?

You can do a 2-4-1 attraction on the day younarrive if you get a paper ticket on the Southern train or Gatwick Express so it has the National Rail logo. Don't know about the Thameslink.
Thameslink too. But despite the strong comments above be aware that Thameslink now have narrow cardboard seats (frequent commuters liken them to ironing boards), many fewer seats, and don't go to Victoria.
Thameslink go via Blackfriars through The City (financial centre) to and through St Pancras International.
The Trainline charge a booking fee.
