We need to go to Gatwick tomorrow, we can make our way to Victoria station and take either the Express or Southern trians system( we were told ) and we would save ten quid by taking Southern trains,, but does anyone know of travel time is hugely different?

The travel time is not hugely different, but the Southern trains are basically commuter trains, so are more likely to be crowded and they stop more often. The Gatwick Express trains were built as long-distance trains, so should be more comfortable with more space for your bags.
Don't forget that you can also get First Capital Connect trains from St Pancras, Faringdon, Blackfriars, London Bridge and many other stations.
You pays your money and you takes your choice.

True enough. And very, very soon - so will be Thameslink (for the moment First Capital Connect) resuming its traditional name and proudly operated by the same gang who pay my salary - yay!!
I pretty much always take the Southern Train. Often, there is only 5 minutes difference in travel time.
