I'm trying to book Brussels-Pancras on Friday Sept 4. The system reverts to Thursday Sept 3 and neatly all trains are labeled 'Limited Service.' Are they not running on the 4th, or have I done something wrong?

Brussels to St Pancras on 4th Sept is showing as bookable when I check - £55 for a single.
Did you pick "Brussel/any Belgian station"? This option shows as unavailable, but if you select "Brussells-Midi" (ie the exact station) you can buy a ticket.

Are you booking on the eurostar website or somewhere else?
I just tried a dummy booking for your date and had no issue with Sept 4 using this website https://www.eurostar.com/us-en

Any Belgian station’s product has been discontinued March 31, 2025.
Buy your Eurostar ticket with 'Bruxelles-Midi' as your departure station, or even better use the belgian international website and choose a particular station as your departure point (you will receive 2 tickets, a ticket for your local train internal Belgium and your Eurostar ticket Bxl Midi-London)
