I will be traveling in October via Eurostar London to Paris, on a Sunday.
My questions are, once I arrive at St. Pancras station how long on average will it take to get through security
before boarding the train?
Are there any porters that might be able to carry luggage onto the train?

Security is only part of it - in addition to a fairly comprehensive security check you then queue for UK exit Border Check, then queue for French entry Border Check, then up to the waiting room and then when the train is called up to the platform.
Do you have extra luggage? Coming right off a flight? Have mobility issues?
The luggage travels in the train car with you.
The current minimum advised check in time is 75 minutes on that route.
