As to "what's open in London" over Easter, what do you have in mind? If it's museums, you can google each one of interest to find out. Or maybe it is restaurants? Or the London Eye? Or the theatres? More info please.
I was in London for Easter 2014. All major museums were open with the exceptions of Westminster Abbey and St. Pauls, except for services.
I highly recommend getting your Easter lamb dinner at Tayyab's, in Whitechapel. Reservations are available online. A line forms at 7:30 or so.
Transport in general will still be running over the Easter weekend but with either a Saturday or Sunday service on Good Friday or Easter Monday. However there may be engineering work closures on specific routes. Easter Day itself is one of the remaining two days of the year, along with Christmas Day, when the majority of shops close completely. Smaller shops may well close on Friday and Monday as well. Most tourist attractions will stay open with the possible exception of Easter Day - check on their websites.

We were in London on Easter weekend Fri.-Mon. It was packed every where we went because of the holiday. We went to the Tower of London and the National Gallery and took the tube
at least 4 times Sunday. It didn't seem like it was Londoners but tourists every where enjoying the wonderful city!
We'll be there leading up to Easter and leaving on Easter day....make sure to check the website of places you want to visit because we altered our itinerary because some things will be closed for Good Friday as well as Easter Sunday. Don't plan to visit any church on Good Friday or Easter and Windsor Castle is closed on Good Friday.
