Train. There is a regular and fast service from Dover to Canterbury East. Roughly two trains per hour, journey takes 30 minutes. Click here for full timetable. Just turn up and buy a ticket.
But, you first need to get from Dover docks to the station. About 1 mile (from memory), this may require a taxi.
You say "round trip", are you planning to go back the same day? Be aware, that although the Dover Calais ferries do carry foot passengers, the ferry service is the cheap alternative to the tunnel, and caters mostly for cars and trucks. There is no money in foot passengers, and they provide minimal facilities. You will have to get to Calais docks (outside the town) and may encounter long walks. The docks are designed for cars and trucks, not pedestrians.
