I’m starting to run out of free days to do the things I’d originally intended. Do you think Sissinghurst, Knole or Hever Castie would be extra busy on the 19th, the day before Easter, or even Easter Monday ?

Probably a bit but depends on the weather and I doubt they’d be unbearably busy.
I agree- probably about as busy as a normal weekend to be honest. I think you'll be fine!

You should probably have a look at what engineering works are planned over Easter and whether any will affect your plans you can find the plans on the national rail site under planned service disruptions. It’s a popular time to get work done with a 4 day weekend. I’m sure we can help if they are not fully clear to you.
You may already know but larger shops are not allowed to open by law on Easter Sunday.
On the Monday buses will be on a Sunday schedule, as will trains where you are. In the North trains that day are on a weekday schedule.
