Generally things have been a bit slower getting through border controls this summer.
It is unlikely you will see many masks but there will no issue whatsoever if you (like me) feel a little better with your own.
If you search for Eurostar on Youtube you'll find lots of vlogs, look for the most recent one and check out the pax and the procedures. But of course, whatever it says on the Eurostar website is the official news.
I believe there is a British Points Guy video about plane vs. train to France that is quite recent.
