We are flying to Dublin from Seatttle with a 5 hour lay over in London. We land and depart from Terminal 5.
Do we go through passport control then back through security or is it all done within the terminal?

You will go through passport control in both Dublin and Heathrow. You will go through security in Heathrow. If you have any bags if through-checked to Dublin you need not collect them at Heathrow.

Go to Heathrow Flight Connections plug in your flight information and it will give you step by step instructions on what you will have to do.
But as stated previously:
Heathrow: Passport Control and Security
Dublin: Passport Control

There will also be a somewhat unusual step in that you will be photographed at security with this photo cross-checked when you board. This is usual at UK airports for people traveling within the CTA if they are co-mingled with international passengers.

Just keep in mind that when you go through security again during your connection in Heathrow, you can't bring in liquids. So, if you have a drink or something from your first flight, they'll throw it out.
