Hi, we're staying in London for 3 days, arriving on a Friday leaving Monday and are close to St. Pancras station and would like to know which would be the best day to take the train to see Canterbury Cathedral, Saturday or Sunday?

The Cathedral has more restricted opening hours for general visitors on a Sunday, so go on Saturday.

Be sure to check Canterbury Cathedral website for any closures. There were significant closures for a full week when we were there. If I had known in time, I would have changed our itinerary.
There are several ways to get to Canterbury by train, the quickest and most expensive being by HS1 high speed train from St Pancras, which is your obvious choice. There are also slower stopping services that roll into Charing Cross, London Bridge, Cannon St and Victoria.
Check with southeaster trains in advance if there will be any engineering work that will affect your journey.
All shops will be open on a Sunday in Canterbury. The Saturday market on the high street is not worth visiting.
