You may find that when walking around the area, you notice places (Pubs?) which advertise breakfasts, including the "Full English Breakfast". I found that to be the case when I was staying in the Victoria Station area last September. You could also ask the staff at your hotel, as I'm sure they've had to answer that question before.
For "quick and economical", I'm sure Mickey D's would fit the bill, and there's one inside Victoria Station.
Sometimes not so quick, you might try Le Pain Quotidien. I like them because they can do soy lattes, lol.
Thanks for all of the suggestions. These are all great places we will try. My husband was relieved to learn there was a Mc Donalds available--"thank goodness we can always have breakfast burritos". Do the even serve breakfast burritos in London Mc Donalds? --Debbie
I had a lovely breakfast here: http://www.nicholsonspubs.co.uk/restaurants/london/thestgeorgestavernvictorialondon before getting the tube at Victoria to Heathrow. St George's was just down the corner from my hotel, the Cherry Court Hotel.
But if you are in a hurry, there are loads of quick places to grab coffee and breakfast; for example., Starbucks are ubiquitous.

These are your choices at McDonald's.....
No breakfast burritos at McD's, in fact no burritos of any sort. You'd go to a burrito bar for that. You can get a breakfast burrito at Mi Casa which has an outlet on the high platform numbered end (right hand side) of Victoria station, near the public toilets and police.
You can get a breakfast wrap until 10:30 at McD's, which is a tortilla loosely wrapped around scrambled egg, bacon (not crisp), sausage, brown or red sauce, and a hash brown.
A breakfast wrap at McDonalds in London is the breakfast burrito. They just put ketchup on it instead of salsa. :-)

Cannot believe London McDonalds do not have breakfast burritos with salsa. I see that their online menu does not have our local Hawaiian favorites of spam, Portuguese sausage or taro pie. We may just have to cancel our trip--not!
