Any thoughts on where to overnight on our way back to London from Southampton?
When we rode the train into London last May, it was only about a 45 minute ride. I'd just stay in London.

While your point is valid, your memory is slightly misleading you. The journey is a minimum of 75 minutes, and normally closer to 90.
We stayed two nights at the Wykham Arms, Winchester. It is a historic building with lodging, a pub and nice restaurant. Also, it is walking distance to the famous Cathedral.
Winchester is not far from Southampton.

Actually there's no reason to overnight from London to Southampton as it isn't far at all however if you meant a stop that incorporates some sightseeing then Winchester is a fabulous choice, one of my favourite cities in England.
