We are flying into Gatwick 5/18/22 and will spend 3 days in London then want to head southwest by car and drive around for 12 days enfin in York.
Where is the best town to train to to pick up a rental car? We don’t want to drive in London at all.

For the most choice and competitive prices you'd be best to rent from Heathrow, particularly if you want an automatic. From there it's a straightforward drive onto the M4 which will take you to the Southwest.
If memory serves there is an Enterprise outlet at the Winchester train station.
From London Waterloo its an hour or so train ride to Winchester.
But your post confuses me. You say SW then say you wish to end in York. So are you saying you want to pick up a car in the SW of England, leave it in York travel back to London and then fly home. I’m assuming your 3 days in London are when you arrive.
Yes, we’d leave London and head to Oxford or Bath, then go to Devon and Cornwall. Drive up the coast then across Scotland eventually getting to York where we want to ditch the car.
Then rent in Oxford.
