Hiya guys and gals.
The wife and I are torn on which market to visit for the best market food in London.
I am set on the Borough market, but we wondered if there are any secret gems out there that we have to try.
Just wanted to get some perspective from someone who has been or knows more about this than we do.
I will eat anything (Yes, Anything) so bring on the weird and wild if you got em.

Personally I like the vendors at Golborne Road Market which is at the end of the Portobello Road Market. Visit every time I’m in London. This blogger will tell you why it’s good. You could also read the blog for descriptions of other markets.
I would second your choice of the Borough Market. We could have spent the day there munching. Any of these at lunchtimes. Make sure you check which days of the week they are open.
We had an apartment near the Borough Market for three weeks and never managed to eat there. It was always too crowded around lunchtime for my taste.
We did enjoy the Maltby Market nearby, open only on weekends. I would describe it as a "hidden gem".
We also stop at the Camden Market when walking the Regents Canal Path. It is crowded as well, but not as crazy as Borough.

She's on a kick about a huge cheese wheel that gets melted down, then they dump it on a pile of potatoes.
She saw that on youtube at one of the markets but can't remember where it was.
Borough Market weds-fri (forget Sat.) Brick Lane and Spittalfields Market at weekends. Camden Stables Market area at any time. Even the South Bank Centre has a food market fri-sun. All offer a wide range of good stuff and most stalls will offer a free sample if you look interested.

I am not sure if there is a "best".
Borough Market gets lots of press, and is is basically an upscale food market with many catering stalls as well as grocery items. I do go there for a fantastic duck confit sandwich, great cheese, very good oysters, clams and other seafood, plus stall vendors selling all manner of ethnic meals.
Camden Markets (including the stables and several other market complexes) has a greater Ethnic bent and a younger vibe.
Portobello on Saturdays has a good variety, I could spend half a morning watching them make, then eating, the huge pans of Paella.
