we are flying from Shannon and hoping to take a train to Hythe, Kent. what airport is best to fly into and is it possible to take a train from London to hythe?

Hythe, Kent is served by bus; see schedules at www.nationalexpress.co.uk. It's served by a short, light rail line, but not part of the national rail system.
Trains to Sandling run from London Charing Cross and take c 1 hour 35 on the direct service. They run hourly. From Sandling, it is c 5 minutes in a cab or there is a bus service to Hythe. National Express buses will be much slower.
Fly into either Gatwick, Heathrow or London City airports as these will have a shorter journey time to Charing Cross.
