I don’t live far away from Leeds Castle, so I have never taken a tour, but it strikes me that from London, you are going to be spending longer in transit than actually seeing places.

Leeds Castle can easily fill 4-5 hours. It’s going to take at least an hour to travel to Canterbury, park and walk to the Cathedral. Presumably you want at least an hour there - the tours are 60 or 75 minutes long.

The drive to Dover, assuming you don’t get stuck in cross channel traffic is around 45 minutes. In Dover, there are 2 options - the National Trust’s White Cliffs where I rarely spend less than 2 hours even on repeat visits. Alternatively, there is English Heritage’s Dover Castle, which is a 3-4 hour visit. It’s not easy to get a good view of the cliffs unless you are in a boat or visit one of the sites I have mentioned. You aren’t going to see much just driving through Dover.

Dover back to London will take 2.5-3 hours.

You can certainly do a day trip to Leeds Castle from London using the train. From the Leeds Castle website "We recommend traveling to Bearsted or Hollingbourne Station." A local taxi from these stations to Leeds castle will cost around £15-20. You will need to make sure you have the local phone numbers for taxis, as these rail stations are quiet and may not have taxis waiting outside. Canterbury can also be reached by rail but that is a 1 hr journey and it is really too much to include in a day trip to Leeds Castle. Seeing the White Cliffs at Dover is difficult. I would just trim your day trip and stick to Leeds Castle. I was just there last week and thoroughly enjoyed it. Have you considered staying at Leeds Castle for two nights and then taking a day trip to Canterbury. (that is what we did). It is easily done by train and taxi without the need of an expensive driver. Check out my trip report on the RS site.
