visiting Denmark, Norway and Scotland

In July, we are visiting Denmark, Norway and Scotland.
Will we need the new European travel card?
If so, how do we apply for one?
We have Global Entry already.

I'm not aware of a European travel card. Are you perhaps referring to the ETIAS entry requirement? There is no start date yet. When it is announced, you will apply for it on line, and it will be digitally linked to your passport.

Global entry is only used in the US.

If by “travel card” you mean the UK ETA yes you do need that to visit the UK.

Get it only from the UK Government website unless you have a wish to give lots of money to charlatans

Global Entry is totally irrelevant.

As noted by Camborne, you need the UK ETA to enter Scotland.

So far the Schengen countries (including Denmark and Norway) have not put into place their planned ETIAS. Once they do, you will need that. I would guess that won't be in place by time of your trip, but keep paying attention here as people will certainly report on it when it is finally implemented.
