We'll be in Copenhagen this summer for a few days and we'd like to also visit Legoland. So far I've found that the way to get there from Copenhagen is by train to Vejle and then take a bus from Vejle to Billund. Is this the best way? Are there any alternatives? Is taking the train and then renting a car a better option? We'll spend at least one night in Billund, maybe 2 if that makes more sense with travel schedules.

Yes, but not any better unless you have any special needs.
Is taking the train and then renting a car a better option?
No, a rental car will cost a lot more than a few bus tickets.
