My family is considering visiting Copenhagen over Thanksgiving (late November) with our baby who will be six months at that time. We know days will be shorter and it will be chilly/rainy, but being from Minnesota, that’s not a concern. Any recommendations for traveling to Denmark at this time of year with a little one?
What time of the year is that? But general, make sure you're dressed according to weather.
Welcome to the forum. Your question is very broad, so I'm not quite sure what kind of recommendations you're looking for?
There's something to do year-round in Copenhagen, so no worries there, when you're aware of the weather and daylight.
Denmark is not celebrating Thanksgiving.
Depending on how late in November you are intended to travel the first Christmas Markets might open up. There are good ones in Northern Germany as well (Hamburg, Lübeck, Bremen).
The mentality of the people that they stay more at home than in summer - Danes love outdoors in summer. If there are events such as concerts, small markets etc. they happen indoor.
Good news is that at this time snow and ice are very unlikely because North and Baltic Sea are still to warm from summer. Another good news is that if there is sun the light has a very beautiful warm character.
One sentence to the chill: I guess that it is more humid chill than in Minnesota cause of the surrounding seas. Therefore it might happen that the chill factor based on a temperature you are used to is colder when more wind occurs.
Food is great all year around.

Not sure what the age of your kiddo has to do with anything? (Except that as new parents you are probably all excited about every little thing to do with your sprog. :-)
Weather should be familiar to you, as you note: lots of Danes settled in Minnesota in the 19th century, presumably because it felt like home, right? (My Danish family landed in Iowa in the early 20th century, FWIW.)
By Thanksgiving, I assume you mean you plan a late November trip? If so, check for Christmas markets. Denmark has fabulous Christmas markets!

Roskilde, with the national cathedral and Viking ship museum, is an easy day trip, and is absolutely excellent!
Prepare for fewer hours of daylight than summer, obviously.
Your “little one” will be too young to remember anything, but you adults should form some lasting memories: Tivoli is seriously fun and cool! Go on rides, take pix of your darling little kiddo, and have a blast!
