I am trying to decide if I should take my family to Ribe or if I should go to Aarhaus instead. We will be going to Aeroskobing for 2 nights and Copenhagen for 3 nights already.

That’s not a simply question to answer. Comparing Ribe and Aarhus is a pears and apples comparison. Ribe is a small town of less than 10,000 inhabitants, while Aarhus is a city of almost 300,000.
What time of year will you be visiting and how many days will you have? What are your interests (some general tendencies in what you like to see and do while on vacation)? Who from your family is travelling (children, etc.)?
We chose to go to Aarhaus but are welcoming suggestions. We will be in Aarhaus June 14 and leaving late on June 15 - so only a very short 1 1/2 days.
We have 4 adults - my husband and myself and our two adult children in their mid twenties .
We are open to doing most anything - we are very active and athletic if there is some adventure near the sea that is worthwhile or we also like history and could be up for more of a cultural experience . We are pretty easy to please and don’t have any predisposition at this point. However, if there is a must see that we should purchase advance tickets for, I would like to know that.

Long distance buses from Flixbus and Kombardo Expressen are usually cheaper than the train, but less comfortable, slower and offer fewer departures to choose from. The trains, operated by DSB, is generally more expensive, but also faster, more comfortable and offer more departures to choose from. I'm fairly certain the train will be the only option for you when traveling back late Wednesday night.

Take a stroll along "Åboulevarden".
Visit "Salling" on Søndergade 27 and take a look down on the pedestrian street from the glass bridge on the rooftop.
I presume your GPS (Google maps or whatever you use) don't have Å and ø, but you can use A and o instead.
