I would like to bring my hiking poles on our trip. Will security take them from me in flight from Copenhagen to Iceland? I will have them in my carryon. They have pointed ends.

You will probably be required to check them. You can always put them in a box or a foldable, nylon duffel bag wrapped in newspaper and check just the poles.
I tried to carry on hiking poles at CDG in France some 20 years ago. Security sent me back to check them. While every country has their own security rules, it is pretty consistent that they don’t allow hiking or ski poles as carry on. If you search for ”hiking poles” in this forum, you will see dozens of posts about this.
