Looking for ideas for a 1-2 night excursion from Copenhagen

We will be in Copenhagen for 8 days in early April (2 people, no kids in tow). We plan to spend most of our time in Copenhagen (with a day trip to Humlebaek), but we were thinking about 1-2 nights outside of the city and are looking for suggestions. We were set on Aero, but then discovered that most hotels and restaurants won’t be open yet for the season. Since tasting the local cuisine is a big part of the trip, as well as exploring hidden gems on foot, we don’t want to lose two nights. Does anyone have suggestions other than Roskilde? We won’t have a car and would like to keep it to four hours max from Copenhaben on public transport so we don’t lose more than half a day each way (train/bus/boat/combos of those). Thanks!

Odense is good for a night or two. Also, Helsingor.

Train to either location is easy. Both are highly walkable with historic town centers, museums, and interesting sites.

There is a lot to see and do in Aarhus. I think it's 2.5/3 hours on the train. Highly recommended.

My vote goes to Malmö. Close, large, relaxed and charming. Try Hotel Mayfair Tunneln or Scandic Kramer.

Outside Copenhagen, Roskilde, Helsingor, the Louisiana Museum, and Malmo are all great options- but they're all so close I don't see the need to stay overnight- they are very easy day-trips from Copenhagen. If you are planning to stay overnight I would go further like Odense which was recommended above.
