Day trips /stop overs

I’m planning a work trip in December with a couple days in Amsterdam and a couple of days near Viborg Denmark. I’m wondering about taking a few days in between or after for some vacation. Where should I look at going? Is it worth flying out of Copenhagen instead of Billund? I’m not too into museums but like really old and medieval architecture, food, wondering around old town, etc. what are recommendations?

You might consider Aachen Germany which is quite historic before heading on to Viborg (Denmark?). December will be cold and wet and with really short days.

And, of course, Aachen has a Christmas Market as do many other places.

I suggest Ribe - one of the oldest towns in Denmark. And maybe Hotel Dagmar; the oldest hotel in Denmark. (But I admit it was too old for me)

Are you planning to go by train or rent a car?

I will have a car while I’m Denmark for sure. I’m not sure if I will need one in Amsterdam and I haven’t determined how I will travel in between. I thought of either driving or taking a train through Hamburg but I can fly and spend more time in either area based on what I decide to do.

Aarhus is Denmark's second largest city and much closer to Viborg. Its airport doesn't have the range of destinations that Billund does (which I guess is because of Lego?). Direct flights are available to London, among others: https://www.aar.dk/en/destinations/

We thought of taking a train from Copenhagen to Amsterdam last year, but it was going to take a long time (the better part of a day iirc) and our sons were only with us in Europe for a week, so we flew instead.
