Hello! My husband and I will be in Copenhagen in May for 3 nights. I was hoping someone could recommend restaurants that serve both vegan dishes as well as non vegan specialties.

A two minute search on Google Maps will net you more than a dozen candidates.

Denis and I only went out twice while in Copenhagen. It didn't feel like a particularly veg-friendly place. I just checked my journal and found two options.
Riz Raz was buffet style at the time, you'd have to check to see how Covid has impacted that. It was just okay, but then we can both cook well, so......
We tried to patronize the veg option in Christiania, Morgenstedet, but could not get in. It seemed like they had been just slammed, and we weren't willing to wait for the rice to cook, so we left.
You could check the grocery stores for prepared options.
