Staying in Copenhagen and would like to plan a day trip to Odense. There are two train systems servicing Odense from Copenhagen. The Deutsche and the Danish Railways. Any thoughts and/or recommendations for this adventure?

I think all trains on this route are Danish, but since some of them continue into Germany, you can see then on bahn.de as well. The best overview you get on https://www.rejseplanen.dk/webapp/?language=en_EN.

Where are you looking for information if you believe that DB has trains between Copenhagen and Roskilde? It sounds like you've found some strange booking site.
All trains between Copenhagen and Odense are operated by DSB (except one that is run by SJ, but it's a night train that stops in Odense in the middle of the night).
Use Rejseplanen linked to above, www.dsb.dk can also be useful.
I would buy a cheap fixed Orange ticket in advance for the Copenhagen-Odense leg. For the return it's a choice between a regular full price ticket to be able return when you want or another fixed cheap Orange ticket.
