We will have 2 days in Copenhagen, 5 days at the Beach in Mon. We will leave Mon with 3 more days available.
Should we take the train to Aarhus and make our way back to Copenhagen? Just go back to Copenhagen and make that our home base? Ideas welcome.

If you stayed in Arhus, would it only be for one or two nights, and then still move to another hotel in Copenhagen, to be closer to the airport? For this amount of time, I'd prefer using Copenhagen as a home base and include Roskilde as a daytrip or a stop on the way to the city.

I personally like Copenhagen. There is more to do/see in Copenhagen than other single place in Scandinavia. There are also several nice day trips that can be made out of Copenhagen. We spent three nights before a Baltic cruise and three nights after and still felt we left a lot unseen. I'd vote for that as your home base.
