In lateJuly, early Aug., 2016, I am taking my granddaughter ( age 13) for two week visit to Provence and also to do part of the Camino de Santiago walk. I would appreciate some suggestions of places, things to include in such a short visit.

You might want to move this topic to General Europe under Travel Forum -- Destination Q&A. It gets lots more action than where you put this and you are asking about 2 countries at the same time.
Beyond that, you and she may want to explore this Rick Steves website and also Google the locations or topics you mention above to get started. Based on our son's experience with his 2 older daughters (10 and 12 when they went to Paris) the one who participated the most in the planning, had the best time and the best memories. The other one, not so much.

Will you have a rental car for your time in Provence? Do you have an idea of which town there you'd like to base in?
We have a family member who will be off to walk some of the Camino shortly for two weeks or so. They are using this book, which is quite impressive:
