Relaxing and walking/hiking after Prague and Karlovy Vary

Hello, I am going to spend 9 days in Karlovy Vary and Prague in June and looking for another place where I can stay for a week, relax after spa stuff and to do some walking and hiking with nice views. Is Mikulov will be too boring for 7 days? Any other recommendations? Original plan was to go to Slovakia mountains but I change my mind after checking the local weather - 50-65 in Stary Smokovec is a bit cold for me.

Mikulov on it's own is going to be a stretch for 7 days but if you use it as a base then you have the lake close to Sedlec, the town of Valtice, the town of Breclav and the Castle/park at Lednice all in close proximity. Just means you'll be hiring a car on some days which should cost about CZK1000 per day plus fuel and any additional insurance. If you don't want to drive then split your time between Mikulov (hill walks and castles) and Breclav (town and riverside) for walking.
