We will be staying 3 days in Pula interested in visiting a winery and spending a day taking in a beach. Any recommendations?

Are you locked in to Pula? It is my least favorite place in Istria.
Will you have a car? If you don't have a car, you won't be able to get to any of the places I'm going to suggest
Winery - the wineries in the northern part of Istria are the best ones. I really trust the Frank about Croatia website and he has some great recommendations - https://www.frankaboutcroatia.com/wineries-in-istria-worth-visit/. I personally like Roxanich.
Beaches - from Pula the best beach by far is to drive down the Kamenjak peninsula, a national park in Croatia just south of Pula. Lots of tucked away beaches (all are pebble or rocks). Definitely go the Safari Bar for a great experience.

Zelenika Beach is good. But I do agree with Emily to stay somewhere other than Pula and daytrip in to visit.
