Can anyone tell me which islands have vehicle ferry service?
Specifically Vis, Mljet or Solta.
Are there any islands that you would recommend spending 4-5 days on and then taking another ferry from that island to another island for 4-5 days to save travel time?
All--Jadrolinija is the carrier. See their website for routes, but in general, inter-island car ferry routes are limited, and you have to go back to the mainland in between in many cases.

I know you can travel between Korcula and Lastovo by car ferry originating in Split, and you can drive onward to Dubrovnik (via car ferry Korcula/Domince-Orebic).
By driving some on the mainland, you could pair Korcula and Mljet
