We plan to spend a few nights in split then travel to Korcula for a few nights and then on to Dubrovnik all in early May
having trouble determining how best To travel by sea ..Do the do the fast catamarans operate at this time of year?
curious as to the options for transit at this time

Ferries and catamarans (note if you take a ferry to Vela Luka, you can pick up a bus from there to Korcula, ~30 minutes):

If boat does not work for Korcula to Dubrovnik, there is a daily bus (bus takes ferry).
The Jadrolinija boats operate from Split into Vela Luke on Korcula, not Korcula town. The daily Krilo catamaran to Korcula town and on to Dubrovnik runs from early April, departing Split at 07.40.
If the sea is rough, the catamaran will not run, but ferries will operate in worse weather. I was there in September and the catamaran was cancelled for 2 consecutive days.

May is lovely to visit Croatia. Mediterranean wheater, not too much cold, not too much hot. Perfect for hiking. Korcula is a great pick. Kapetan Luka speed boats connecting the south Croatian islands. You can book online or when you are at the port.
