I am planning a November tour of Croatia based in Split for 7 days. I intend on staying an extra day for the local St. Martins' Day (Martinje) Wine activities. Are the island boat tours available in November from Split? I know it will be too chilly to swim and most of the island restaurants and shops are closed for the season. But it looks like they are still offered on Getyourguide and Trip Advisor.

Because the weather on the Dalmatian coast rapidly deteriorates in October with wind and rain —and, as you’ve pointed out, shops and restaurants begin to close— I don’t think boat tours would continue operating as late as November 11. Note that St. Martin’s Day is primarily celebrated in Croatia’s inland wine-growing regions.
