Private Tour/ Itinerary

My husband and i are planning a Slovenia/Croatia trip in May to June. We are looking about 15 days and want to take our time.
We are thinking to start in Zagreb or in Slovenia. Slovenia will be about 2 night to cover Lake bled , city tour.
Then head to one of the caves... then off to Trieste for few days- anyone have suggestion if this is worth a few days?
Then to Rovinj, Motovun, maybe truffle hunting, olive oil tasting
Plitvince lake, Split, Trogir for the day then to Hvar, Dubrovnik

Any other suggestions for 15 day?
I don't have much time to plan and want to see if any suggestion for a driver/ private tour company..
We don't mind renting a car for few day on our own.

We booked a 10 day private driver through facebook by the name MC Travel Croatia. Driver Miško was very knowledgeable and flexible, great conversationalist.

Croatia is an extremely easy place to travel. I’d rent a car and do this independently. I think your list is a bit overambitious though, so I would write it out day by day and then see what you can leave out. I would do the first half or the second half, not both. Croatia is much like other Mediterranean countries in that time to smell the roses is well rewarded!

You might also consider spending some time in Pula while you are in Istria. It’s a historic coastal town about 40 minutes from Rovinj and it has one of the best preserved Roman amphitheaters in the world.

Many visitors also use Pula as a starting point to explore the small islands and hidden bays along the southern Istrian coast. A boat day around the Brijuni area or the nearby islands can be a really beautiful experience, especially if you enjoy swimming and quiet coves.

Since you are already planning Rovinj and Motovun, adding half a day or a day in Pula would fit very well into your itinerary.
