Please advice: Istria or the islands for 3nights?

We’ll be travelling to Croatia with our 11yo son. We will have 8 full days on the ground, flights have been booked into and out of Zagreb.
We’ll arrive on Tuesday, July9 in the evening (from Eastern Europe, so no jet leg 😊 ) and we consider 3 nights for visiting Zagreb, then drive for 1night to Plitvice. Not sure how busy is the park on Friday/Saturdays - is it worth saving Plitvice for our way back, which will be on Monday?
Please comment if we should spend the next 3nights in Istria, or visiting the islands. My son loves nature, medieval festivals, beaches, but we‘d like to immerse him into the cultural side as well.
We’ll drive back to Zagreb for the last night for our next day overseas flight.

Please advise on the itinerary, local food restaurants and attractions.

Take one night from Zagreb and head over to Istria. Afterwards you can head up the East coast and take in Opatija, drive on to Krk island, leaving Plitvice for the quieter day.
When you have refined your plan, I will give you info on attractions and restaurants.

Agree--no reason you can't do both--there are islands in the north as well. With three days, I would not try to squeeze in too much. So, either Split plus and island, Zadar area (could do an island day trip), or somewhere in Kvarner or Istria. Perhaps read over what's on offer in each place to help you tailor it to your family's interests.
