My wife and another couple will be concluding our trip through Croatia by staying the night in Dubrovnik on 9/16/25 and flying home the next day. Suggestions on places to stay, things to do, and quaint places to eat. We are in our early 70's and active.

How's your stair-climbing? there are plenty of "sobe" rooms in Dubrovnik. These are rooms in private houses which are rented out - a precursor to Airbnb. We found ours on booking. com I believe.
As to things to do, you have part of 1 day. Walk the walls, have a drink in one of the pubs, tour the Franciscan monestary pharmacy. You don't even need a 3 day pass. If you could, try to extend your stay 1-2 more days. That would give you a lot more options.
Cable car to Mount Srd for beautiful views at sunset; visit the Homeland War Museum there beforehand. Walk the walls early in the morning.
I agree that you should extend your stay in Dubrovnik if at all possible. Things to do: walk the walls, visit War Photo Limited, take the cable car to the top of Mt. Srd, and visit a monastery.
