Looking for advice for a one week trip to Croatia, Dubrovnik to Pula. Active 60yo and 25yo looking for off the beat path itinerary. Is it best to travel by car, bus or train. Just starting planning and looking for advice.

Have you at least settled on how much time you would like to spend in Dubrovnik and Pula? At least two days each, I assume, though you could easily double that for both--so it helps knowing your interest in each and how long you think you want to stop (i.e., get through half the drive, rest a night, and finish the next day?)
Train is of no help, and with your limited time and such a long distance to travel, I would pick up a car upon leaving Dubrovnik, and drop it before flying out of Pula (if that is the plan).
