We (3) are interested in Korcula. Would it be advisable to take a round trip ferry from Dubrovnik to Korcula for just a day to sightsee & travel around by bike? Is it too far for just a day trip? We have to leave to return to the US the next day. It looks like there are just a few ferrys and it's about a 2 hour one-way trip.

I would not spend four hours in transit, however there are some lovely islands closer to Dubrovnik, the Elafiti and Mljet. Not sure the transit times for those. Check Krilo and Jadrolinija.

Yes. Too far for a day trip for what you would experience. There’s plenty of day/half-day tours to the Elephiti Islands which are not dissimilar in general. Cavtat is also a good option.

Korčula is possible on TP Lines, leaving Dubrovnik at 8:00 and returning from Korčula at 18:20, two hours each way and the journey would be beautiful, but you are back in Dubrovnik at 20:20 so it would be a full day.
However that is the single sailing time that I can find, there are not a lot of boats from Dubrovnik to Korčula.
