How to best budget time from Dubrovnik to Zagreb

Hello Travel Forum!
Thanks in advance for your time and suggestions. I will be traveling to Croatia for the first time with 3 friends in early October. Starting in Dubrovnik ending in Zagreb. We will have a car. Given the itinerary below and given your experiences, does the time spent in each location sound feasible? Our main interests involve historic sites, museums, food, and wine. Knowing this, is there anything we shouldn't miss or that we should add (and even perhaps take away) from the itinerary? Thank you again! Looking forward to visiting Croatia!
Day 1 - depart US
Day 2 - arrive Dubrovnik in afternoon, afternoon & evening in Dubrovnik
Day 3 - Dubrovnik
Day 4 - Dubrovnik (with trip to Mostar)
Day 5 - Split
Day 6 - Split (and trip to Trogir and other areas close by)
Day 7 - Split (and trip to Hvar)
Day 8 - Zadar (stopping in Sibenic on the way)
Day 9 - early morning to Plitvice Lakes, late afternoon arrival to Zagreb
Day 10 - Zagreb
Day 11 - Depart Croatia

I think this is good, but if I could make one suggestion, on Day 4, go to Mostar and stay there overnight, then onward to Split on Day 5. If you look at a map, you'll see how much sense this makes.

I think by October the crowds at Plitvice Lakes should be smaller, so Day 9 should be okay even if you don't make it to the park right as it opens.

Pretty good times. Sibenik is a fun town. Look for the turtle fountain.
